Prawn, Mango and Macadamia Salad

Ingredients

Serves 6 side salads

  • 1kg Cooked Prawns* 
  • 1/2 cup lightly roasted Macadamias, roughly chopped
  • Mesclun lettuce mix (enough for a large salad bowl)
  • 2 small Red Capsicum, sliced
  • 100g Blanched Green Beans, halved
  • 1 bunch Grilled Asparagus, halved
  • 1/2 an Avocado
  • 2 Mangoes, sliced
  • Drizzle of Mango & Chilli Vinegar

Method

  1. Mix well and dress with our Mango & Chilli Vinegar.

*can be replaced with poached/steamed chicken pieces)
