Prawn, Mango and Macadamia Salad
Ingredients
Serves 6 side salads
- 1kg Cooked Prawns*
- 1/2 cup lightly roasted Macadamias, roughly chopped
- Mesclun lettuce mix (enough for a large salad bowl)
- 2 small Red Capsicum, sliced
- 100g Blanched Green Beans, halved
- 1 bunch Grilled Asparagus, halved
- 1/2 an Avocado
- 2 Mangoes, sliced
- Drizzle of Mango & Chilli Vinegar
Method
- Mix well and dress with our Mango & Chilli Vinegar.
*can be replaced with poached/steamed chicken pieces)
